Our second cider from 2020.
Anyone who know my Mum knows how lovely she is and even how lovely her garden is. Each year we pick her entire fruit haul. A medley of Granny Smith, Fuji and Crab Apples (a tiny red flesh apple so sour!), we then move onto the aspalied apples all around her vegetable garden and cattle yards and the pear trees before picking one of the biggest Quince trees you have ever seen - its a real family effort to pick!
The quinces add a beautiful floral character on the nose. We pulp all the fruit and leave it closed in a tank for over a month and treat it like we would an orange wine foot stomping the pulp every few days.
